    Step 1

    Poke holes or slits in both sides of roast and put garlic cloves inside. Season outside well with salt, pepper and garlic powder. Dust roast with flour. In large skillet, place 3 tbsp. olive oil and heat well. Cook on medium high and place roast in skillet and brown on all sides. Then put roast on rack placed inside of pan and place in 300 degree pre-heated oven and cook for approximately 2 & ½ hours, for my size roast. Bake at 300 degrees in pre-heated oven for approximately 2 & ½ hours. (My roast weighs a little over 5 pounds. Check Google for cooking time depending on size of your roast).
